Easiest Potato Salad Ever, Hawaii Style
Potato salad is an essential part of any self-respecting Hawaiian style potluck. Usually, it’s loaded with not just potatoes, but whatever else you have lying around in your fridge. Locals enjoy putting macaroni and tuna fish in with the potatoes, and adding a splash of something sour — vinegar, kimchi juice, pickle juice — with the mayonnaise. Making potato salad is a no-brainer. The hardest part is waiting for the potatoes to boil. If you don’t like tuna fish or hard-boiled eggs, don’t put them in. Simple as that. Stir everything together until you get the look you want. Add more mayo and garlic-salt (or salt) until it tastes just right.

- Tuna fish, canned
- Elbow macaroni
- Hard-boiled eggs
- Frozen peas
- Shredded carrots
- Scallion or Maui/Sweet Vidalia onion
- Mayo
- Pickle Juice, splash
- Dijon Mustard or any savory mustard
- Garlic-Salt
- Pepper
- Onion Powder
