Mrs. Voss’s Banana Cake
Ingredients for Banana Cake:
- ¾ c. margarine or butter
- 1 c. sugar
- 2 eggs
- 1 c. mashed bananas, must be very ripe, island bananas, if possible
- 2 c. AP flour
- ½ c. *sour milk or buttermilk
- 1 t. baking soda
Mix butter/margarine and sugar together in large bowl. Add unbeaten eggs, one at a time, beating thoroughly after each addition. Then, add mashed bananas, mixed with sour milk or buttermilk, and stir well. Sift dry ingredients and mix in. Beat by hand until incorporated, but do not overmix. Bake 25-30 minutes at 375 degrees F in greased 9×13” pan. Start checking a few minutes before until toothpick in center comes out clean.
Ingredients — Buttercream Frosting:
- 2-3 T. butter, softened room temp.
- 2 c. powdered sugar
- 2 T. whole milk or 2% milk, room temp.
- 1 T. vanilla extract
Mix ingredients together in the stand mixer with wire whisk attachment. Frost cake.
